Yeah I would say a Senegal would be a good fit for your 60 gallon and won't outgrow it. Delhezi would probably work too.

You can get 1"/month growth out of a goldfish. They need to eat a lot more than an endli to grow like that, though. Never tried it, but I'd think a full grown goldfish would be a good tankmate for an endli - they are big 16"-20" @ 3 yrs., 12" @ 18 months.
I automatically assumed it was the size if a feeder Goldie. Didn't know they grew so quickly though.
You need, space, clean water, good aeration and plenty of food to get them to grow like that. Sunlight helps, too, I'm not sure why.

Bloodworms aren't very nutritious for a staple food, so as mentioned try a variety of pellets and some frozen tilapia.
