Anything big enough to fit in a JDs mouth will be eaten in a 75 gal tank because there is not enough space to escape.
This is one of the reasons I suggested sailfish mollies (beside being geographically correct) they reach almost the size of a JD.
I have seen adult mollies in the Cenotes larger than 7".
But if this is to be a community tank in an office, JDs and cichlids are usually a bad idea,
An electric Blue JD might work because line breeding has weakened many of their natural abilities, and instincts.
Note JDs attacking live bearers in the pic below. Because of the large space, and confusing shoal activity, they miss, at least 9 strikes out of 10.

I wouldn' suggest a JD for a 75 in an office, i think he'll probably hide all day. I have one and you won't se much except the tip of his face behind the rock until I give him food. Also it depends on the temperament of the fish but mine is too aggressive to be kept with other fish even in my 150 gallon so i had to put a divider in. I think if you want to have a relatively big cichlid in that tank i saw someone suggest salvinis, i agree with that choice they are way more peaceful and they have really pretty colours. If not something like firemouths could be nice.
