Filleted then grilled on medium hot grill. Grill must be very clean and lightly oiled before using or fish will stick. Pat fillets dry and lightly rub with mix of red pepper flakes, fresh ground black pepper, and a touch of dried tarragon, then drizzle over with good extra virgin olive oil that has been mixed with a little lime juice, cayenne pepper, and a bit of dijon mustard. Use extra wide metal spatula to turn fillets.
Place fish on grill, close cover. After 2-3 minutes open cover and brush with more oil mixture, Close cover and wait 2 more minutes (about). Flip fish and brush with more oil, cook 2 minutes covered, then brush again. Cook 1-2 minutes more until done.

my mouth literally watered reading this,............

sounds good enuf to try,........ thanks

No prob... try it, you'll love it!

Another way I cook fish (again, usually tilapia or another mild white fish) is to coat the entire fillet in a coarse dijon mustard... the kind with the whole seeds in it. Be generous with the mustard, wrap it in foil and BBQ or stick it in a casserole dish and bake it.

Soooo good! I had it at a restaurant years ago, and have been making it ever since.
