We are pretty lucky, there are mushrooms to pick for 8 months a year. I wasn't very clear, the truffle is from this spring but the Boletes are from last fall. Your prof is right about the rodent-pits, rats and squirrels LOVE truffles!

I like to cut them up fresh and cook them in a little butter and salt on a very hot cast-iron skillet. mmm...

The truffles are incredible... Makes me want to grab a rake and start digging!

Some mushrooms have distinctive enough features that they can be identified fairly easily (hedgehogs, for example), but the only way to be truly safe is to start going with experienced foragers. My friend that got me started has spent many weekends going to mycology meets and COUNTLESS hours on a mushroom forum (sound familiar to any MFKers?). A book is a great place to start, but nothing can replace hands-on experience in the field. I'm sure there are self-taught mushroom hunters out there, but I tend to be cautious.

No gun, just a pocket-knife and a bag (or a basket, if you want to look like a Hillbilly Martha Stewart).

WOW! That is one monster mushroom. I've got no idea what it would be. Around here there is an edible mushroom called a "cauliflower mushroom" that is vaguely similar, but not the same.

Maybe Acer can I.D. it...
