When its hot, throw in some ginger and leeks ( sliced leeks into long strips, same thing with ginger). When you feel you can smell the ginger and leeks really good, then pour it on top of your steamed fish. A tip: Stick some sliced lemons in the fish where the cut is to gut them is. It gives you a really fresh lemony scent.
