Biggest fish for a Ten gallon

Also: I'm also hoping to make it a planted tank, I have lots of plants and it just looks so cool with the long stalks of plant sticking upwards, and the little catfish hiding beneath them XD.

I think 10 gallon aquariums are too small for anything but bettas and a few tetras maybe, 20s offer a little more room for a starting aquarium.

As for stocking your 10, sure a cray would be fine as long as theres a spot to call home in there.. you could also add a few neons or danio's... ooh, or guppies.

(ooh, also keep in mind, in time you will need a larger tank for a cray.. they do get fairly large

Pair of multies or simis would be fine. Imo they would be boring to watch without any other fish to squabble with.

You really are asking this on the wrong forums however. This is more of a big tank place, aquaria central is geared more towards small/medium tanks.
