Cool project. Some underwater LEDs could serve you well here.

American eel should be fun. I frequently collect them as delicious bycatch when bottomfishing for other species. Seen a lot of fishermen get angry and throw back huge eels when they catch them...guess they never had BBQ eel. Will you be raising these for culinary purposes?
 
i would try eels with mudpuppies. Those salamanders are gone be food. Or alteast their limbs and some body parts.
Would keep it with eels, crayfish and catfish

I can't wait to see what this becomes! I've never thought of making a cave set up, it sounds cool, but also pretty limited in your options.

I wouldn't put much faith in those articles about the eel living for that long in a well. As jjohnwm said, they were likely replaced. An eel wont survive long eating flies.
The larger the eel, the more difficult it is to age the otolith.
If you can somewhat replicate a light natural light cycle, that would help. I'm still not a fan of this project.
 
I despise american eels because they steal my bait while I'm fishing but wow this would be a perfect setup for them. Big, hardy, eat anything, half the time theyre at the muddy bottom in deep filthy rivers and dont even get any light anyway.
 
Still coming together on the project no eels yet but I have a school of rosy red minnows and goldfish along with 5 channel cats. It’s actually gone super viral on the internet Rolling Stones interviewed me a couple weeks ago.
