Also in a different tank I have some water hyacinths and I want them to carpet the top of the tank. Does this choke the oxygen out of the water? It has a canister filter too.

Plants will take co2 and release oxygen, and then the opposite, tsk technically no effect. As long as there is surface agitation there will be o2 getting in the water.

What if it completely carpets the tank but there is like 4 -6 inch spaces where there are no plants throughout the surface

Depends on the species, pleco probably wouldn’t bother floaters, but others like livebearers or cichlids may.

Only one I’d watch out for is the chalceus. They are more carnivorous but won’t hesitate to go for plants. It would probably prefer something leafier though.
