I hope you laid out the plants until they were completely dry. bleach is very dangerous. If your no2, no3, and nh3 are zero then I'd be doing a water change. This is just speculation based on what you stated. I am not a biologist, but I know things need to be completely dry before replacement.

Not that I'm an expert here - I'm not. But I have a ton of books and one of the books I'm reading about plants is that you can put too much C02 in your tank - do you have a Co2 reactor? It can be just little weird things like that that can kill everything and your water perimeters can all be fine. If your ph is neutral, your nitrate/nitrite/ammonia are cool - it's just something that you cannot read. Maybe a little bleach, who knows. I used to over clean my tanks and then wonder why my fish died. It was too much for them. It's just weird that way. It's always something... Anyone who said an aquarium is soothing never had to take care of one ....
