Sort of... It is kind of like fishy pork... I'm personally very fond of Gar meat and it is excellent table fare. Different species have a bit different taste and texture.
Gator is very firm fleshed and not very fishy at all, Spotted and Shortnosed are a bit more mushy and not as firm but still has a mild flavor along the Back strap it is a bit fishier toward the tail. (Very good chopped up, breaded or smoked ) Longnosed is weird to work with and is best really fresh as it gets a strange blue color when frozen. Still the back fillets are quite good when chopped up and breaded or Smoked and then chopped up for a salad.

Never tried Tropical or Cuban yet... After September I'll let you know How Tropicus tastes :D As I'm not going all the way to Costa Rica without trying it!!!!!

Gar meat is really quite good and it is unfortunate many just do not realize that. It really would be an excellent aquaculture product with a bit more education on how to prepare it and cook it. For now though it seems some that are selling it are misleading you into eating "Tilapia" when it ain't tilapia at all....They do not actually taste much alike at all...

you may be right i have no idea so i wont argue:naughty:. but sound like if you are right its pobably processed beyond recognition and will taste so bland it may be mistaken for common white fish. :cry:
i think i'll hold out for a fishing trip to a lake that has gar monsters and keep just one to cut a good size steak and take a bite.:popcorn:

i'll report if i ever get around to it.;)

wouldn't that be illegal...they must word it in the ingredients in a way to get by with it???:confused:

it's a common name refering to whatever fish they choose...that's why common names suck! then again...if it had too big of words in it (Lepisoteus platyrhincus or Lepisosteus oculatus) some people may not understand what they mean.

i think the importance of scientific names (you will recognize these as "those long words that you don't want to bother understanding or learning") has been well-established here and in several other media.
