Well, I used to have a Premier DC 3320 before... 3.2 megapixels... now I'm using a Nikon D60 (10 megapixels)... got fed up of Point-and-Shoots and moved to the wonderful (yet tough) world of DSLRs..

I suggest you use the viewfinder rather than the LCD screen when taking pictures... trust your eyes more than you would trust what the camera sees... and ensure you are focusing on the subject rather than the background...
For example, in the picture of your poor maimed hand, the background is sharper while your hand (which is the subject of the picture) is blurred... it is rather hard at times to notice the correct focus on the LCD screen... that's why I heartily recommend using the viewfinder
Please do a few tests and let me know what you think.

Had a quick play and there is definitely some improvement, I know I'm breaking the golden rules of photos by not cleaning the glass first, I was only having a play around

That first picture is very good - very clear and sharp. Now comes the nest tip:
Patience
You will have to remain in position and wait for George (or any other mobile subject) to move into a position you like... for example, George in profile at the centre of the tank. Then... click! You take the picture.
It might not work at times - he might suddenly move, you might delay a fraction of a second in pressing the button, etc. but keep trying.
Remember that your focus should be on him (your subject). As you will be looking in the viewfinder, you will know whether he is in focus or not. If he seems clear, he is. Or else, he's not. What your eye sees, your camera does too. Don't let yourself be distracted by what's around.
Once you have tried that successfully, we'll move to the next step.
