+1 I have to agree with the above and have experienced this with a few fish bought from said chain pet stores. Not to say you will always end up with a genetically inferior fish from one of these store, just the chances are higher.
I lived in Charlotte, NC, for 3 years. If you are anywhere even close to Lake Wiley on the southeast border of NC, I would check out Fintastic if you have not already. It is a great fish store with tons of livestock and tanks. I have seen a few GT's for sale there that were just incredible looking and with awesome personality. I would get rid of the fish you have and make a trip there, even if it's 2 hours away, it is worth it (obviously call to make sure they have a GT in stock). I was about 45 minutes away from Fintastic and would go there every Sunday just to check out all the tanks.
As far as food for a GT- I would stick with high quality pellets as the staple and mix it up with these; bloodworms, skinned peas or spinach/romaine lettuce, algae wafers and the occasional treat of live crickets or red worms.
