I think you need to fix this first issue before you start adding other fish.
We don't really know what type of eel it is, and that is the first step. You need to know what animal you have.
Get that water tested. It is very important. How long as the tank been running?
Getting the eel eating might be hard. A lot of eels that are wild caught then sent to petstores never eat, and end up dying. I'd start by putting 3-5 feeder fish (mollies) in there. Also try to offer food on a stick - shrimp, squid, clam.
ok well i just had my water tested it was the ph and nitrIte wher hi and the mangerr of the place gave me this stuff to bring them down hes a prity cool guy and iv know him for a whiol. but dose that kinda stuff actuly work tho??
im happy to say iv done evrything u guys have sugested and he seems to be doing alot better and i hope to see him eating soon .. hes a heck of a lot more active then he was now
As far as ammonia goes, you shouldnt have any in your tank. It is either in there because your bioload is too high, or because your tank isnt cycled.
Sorry if someone else has already said that.
Water changes might be necessary to keep your eel alive if these levels get too high.
The other option would be to take it back to the petstore, get some cash for it, cycle your tank, and put that money towards a new eel that you see eat in the petstore.
Comatose, your picture is awesome. It almost makes it look like the eel is charging out of its hole at you. Obviously the sides of the picture are just blurry, but the effect is sweet haha
