Looks like stainless steel
 
you can use stainless steel or you can use a busket with pvc rack also for saving cost. as long as the water is droping from top down and well distributed evenly. i guess they use a plate with many holes in the top level before the water begins to drop through.
 
The key to the Bakki Shower is the "bacteria house" ceramic media. Also the multi tray "shower", with alot of open air. There is alot of information just do a google search on
BAKKI SHOWER and BACTERIA HOUSE MEDIA
 
yeah... i think the siporex ceramic ring will be good material for this.

I don't see why it wouldn't work...
The depth of 18" per tray of media, seems to be the common factor in sucessful shower systems. Alot of water flow and air space between the trays...
