First I am sorry to hear you lost your job =(
I don't think I can be much help. I did however have to do internships and a lot of volunteer work to get into my field of work. I would talk to your professors and see what contacts they have and what they recommend for an internship. I found that a lot of professors seem to have a lot of connections to places that are great for getting internships at. Then I would also find places that look like good prospects in your opinion as well. Compile a list, work on your resume, references and get a few copies of your unofficial transcripts. You can e-mail or call each company or check their website for information on internships or go down there in person and let them know you plan to work in whatever career field and your looking for an internship and give them all of your info. There are a lot of places that do interviews for internships so be prepared for that as well. When I did my interviews I was professional, honest and enthusiastic about the work I wanted to do and was interested in. I was asked a lot of questions and I used that to my advantage to show how much knowledge I had on the subject or what I was applying for.
I don't know how internships with your field works but that's what I did. I don't know if it will help you but I hope you find something.
