In my tanks the dark ones are about to breed and the pale ones are stressed... but maybe my water works different than yours...

Yeah I agree....anytime I've kept a dempsey, the lower in the pecking order the more tan it was...but as it became more dominant, the darker brown or closer to black it got...that's when they're the most attractive, imo.

Just because you don't own nor seen one in real life does mean it don't exist(not saying I own one but theoretically its true). It's probably one of the rarer occasions just like seeing an albino person.
With fish being stressed...lol, are you guys kidding me? Stressed out fish are paled and coloration are very very light and very off color and not so attractive. The more attractive the color, the healthier and better mood the fish is in.
With that being said...nothing is impossible. :D
 
Sorry to dredge up an old thread, but just wanted to post a pic of my JD. Jet black, always has been.

Regular JD in a tank with dark substrate. Jet black implies it is nothing but black. That fish is blue with black overtones. Still a nice JD though.
