Not all of those gars reach 12 inches. So i think that should last you most of their lives if not all. I say this because ive never even seen them reach over 8 inches in my lfs even tho i know they do.
 
btw the mosaic gars are actually a type of tetra... carnivorous and quite challenging to keep, and particularly to get off live foods. They are also prone to skitterish behavior and can and will ram into the walls of the tank and attempt to jump if spooked. They can be a nice addition, but they are abit of a challenge.
 
i have no prob only feeding live my mom has to 12gl that i can breed mollys in. and could prob get them to eat worms and i have an unlimited supply of those were i live. i have heard that they are very spooky so im going to plant the crap out of the tank and put a big plant on the side of the tank were the door to my room is. and ill do some kind of flouting plants and give it a lot of cover. should i drain my tank and cycle it again and get my water parameters perfect. cause the nitrate is a little high and so is the ph for the gar plus and get it really clean because ill be honest i have slaked a little with water changes and i have been over feeding. i have to put gravel in the tank and all the plant and driftwood so it would make it a lot easier. im excited that i finally found the fish that i want and i can make my tank work perfectly
 
Wanted to chime in on the whole floor supporting a 75. It 100% will support it, no question. If its an old house it is VERY strong, if its new, it still had to be built according to building code and pass inspection, which is more than enough to support a 75, and actually any floor should support up to at least a 125G without a problem. (I design new homes and additions).
 
If you run the calculators, most 55s hold less that 55 gallons of water, if you get a 75 and use 55gallons... Fill with 11 full 5g buckets it'll be a couple inches shy of the top, this is good for a couple reasons.

-Lower water makes it harder for the occupants to escape, a problem with Bichirs and easilly spooked fish!

-Longer distance for your current HOB's to spill into the tank, increasing O2 levels.

-White noise to help easily spooked fish cope with outside noises.

The better benefit is the increased foot print for the fishtank, a 55long is not very wide, and could be easily tipped by friends. If all else fails the 50 breeder as you mentioned which is just a 'standard' 50G is 36x18x18. This might be a better choice for this same reason...
 
I wouldn't put a potentially foot-long ambush predator Characin in a 55. It's way too narrow. All it takes is a door slamming or you jumping out of bed too fast a BAM, one of them goes headfirst into the glass, hard. And they won't eat worms, they'd probably only take live fish or Ghost Shrimp. Not overstocked bioload wide, but the tank itself is too small for the "Gar". (You might have better results with research if you use the name Spotted Pike Characin or something along those lines).
