Grilled is my favorite so far. Figured some of you might find this interesting, although most have likely already seen something similar.

Fish are friends, AND food. :D

you should try it chinese style, fried then garneshed with tamarin sauce veges chilis etc.

I have that same exact Weber Grill. I love that grill... fish looks just right to me also. CHard on the outside and the whit meat should be great with some nuc mam.

Chinese style pacu? Drop a recipe on me man, Ill try it, and post pictures. I have a ton of pacu in my freezer.

Dunno mate, I grill fish quite a bit, and this is how I do it. Skin is actually one of the best parts on the Pacu.

Phew...thanks Trace.

They actually arent that bad. There is a boneless back fillet, but obviously we can get to that because we grill them whole. There are y bones along the backbone, I have yet to come up with a way to fillet these badboys out. The ribs are big enough that you can eat them like pork ribs, the meat just pulls right off.

Its a great grill. Thanks, you are making me want to put on my boots and fire it up in the snow. I havent tried nuc mam...but I could pick some up...you guys are gunna give me some new recipes to try. :D
