Heres the before and after...

This recipe was just your standard grilled fish. Gutted, scales on, spice rub, and stuff the cavity with spices as well.

I have also had it baked, fried, and BBQ'ed on the grill.

So far best was either BBQ'ed or grilled. Both styles add to what I think is sort of a natural smokey/spicy flavor to the meat.

You guys have given me some more ideas that will hopefully be tried sooner rather than later. I will give feed back, post recipes, and pictures if anyone is interested.

Just posted here because I thought it related.

I am one of very few people on here that has the ability to keep pacu to full size.

(Not saying these fish are full size, these are some of the smallest ones we harvested, and really they should have been much larger.)
 
I was going to comment on the size. You were eating babies.

Are you attempting to start a aquaculture farm for pacu as a food product?
 
Looks Just right.

There are many different ways to make Nuc mam. Nuc Mam is best when its made fresh from home. One way is a mixture of fish sauce/lime/garlic/sugar/chili peppers. Unfortunately buying it will probably wont give you that same great taste. If u want to try it I will show you how to make mom's nuc mam.

I have heard pacu is delicious and a staple in SA. I fish for food all the time so I enjoy seeing fish from different regions. Seems like sooner than later, Florida will have a pacu population and should provide some good eating.
 
Yeah, I love Pacu as a pet, but I would not hesitate to try some of what you're having. Looks scrumptious.

Not quite babies. With a max size of 60cm on this particular species, they were no where near the girth that they would have achieved, but some where 10-12 inches. Needless to say next year we are aiming for 16-18" before slaughtering.

Pacu are starting to become a big thing in food fish.

It is good, if you were in Wisconsin, I would let you guys come pick some up. Next year if we are licensed as a fish farm, and everything else we would need to sell I might ship you guys some fillets.

They are good. Always wanted to fish for and eat oscar, but never got the chance while in FL.

Cool thing about growing these large tropicals for food in Wisconsin is that we have a decent growing period, but there is no way for escaped animals to live in the wild. Very environmentally friendly.
