Last time with the 75

Alright, and with this should a weekly WC of around 30 -40 gallons along with a variety of plants and pothos sound good?
 
Only your water parameters can tell you what amount is going to work. However if I was going to hazard a guess then I'd say if you heavily plant it inside and lots of pothos then it certainly should be good. Don't quote me on that second part though.
 
Gotcha, any ideas on the pearl gourami vs eba? thinking if most of it is SA might as well go the extra mile and make it all SA. 3 pearl gouramis at around 4-5 inches each or 2 eba at around 5-6 inches per fish. Also rainbowfish are out due to size right? Or an undyed jellybean parrot at around 4 inches.
 
I haven't had rainbow fish before but I feel like they might be a bit active for a 4 foot tank. Size wise I personally wouldn't have a problem with putting the in a 75. I wouldn't have a problem with putting all the fish you listed together except for the pictus for their active and maybe the rainbow fish but I run my tanks at a heavier stocking. Let's ask for another opinion.

Actually that is a good point, Id prefer the tank to be very calm and rainbows may be a little too active unless there are any calm species. But I am hoping to end this tank with 1 large cichlid (the sev), a group of dwarves (the rams), 1-2 schools of fish(lemons and hatchets), and either a group of gourami, a pair of acara or 1 jellybean parrot.

Also you said jellybean? If you're talking about the colorful parrotfish that are blue, green, etc, then you should know they were tattooed and it is cruelty to do that to a fish. Also I believe the color fades over time.

Oh no, I just did some more research, jellybean parrot(undyed, dying fish is horrible) are blood parrots but instead of reaching8 inches they reach 4 but because they are basically blood parrot x convict they have the temperament of a convict so no on them. And a regular blood parrot may be too much for the tank as I still want to keep it manageable on weekly WC and the occasional extra WC here and there.
 
I'd go for the EBAs over your other options, I think gourami would be out of place in the mix. Also 1 large school of tetras is more appealing to me than 2 small ones but that's just personal preference. Maybe as others have suggested have a school of tetras and hatchets. Have you looked at Columbia tetras? A cool looking larger tetra which would suit your tank.
Overall I would try to stick to South American as much as possible so wouldn't go for the rainbows or gourami. I love pictus cats but as has been said they would make too much of a ruckus for the rams.

Thanks for tagging me and apologize for the late response. After work my phone was nearly dead. I like Ogertron3000 Ogertron3000 stock option choice. I personally would add a group of Corydora for the bottom they are active but not overly active imo.

I'm one of those Geographically correct anal types, that feel Asian gouramis and Australian (New Guinian) rainbows are out of place in a primarily South American tank.
I also feel mutant fish like blood parrots don't belong, in tanks with real species.
Personal idiocyracies on my part, I realize)
But also agree a large school of "one" type tetra, is much more appealing than 2 small shoals, (to me which species is a personal taste issue).
And like Tom said, a shoal Corys, would seem to me to be the best catfish option (especially with the rams) in that size tank.
