I catch big browns from time to time and they arnt greasy. :screwy:I like them more than steelhead and some of the other trout, I think they have more flavor. There meat is also alot more orange in color. They are also very delicious!:drool:

You can't really fillet the cheek. It come with the head, just cook it however you like, and remove the cheek and eat it. Its the two pieces of flesh on the side of the heads.:drool:

Cheek meat of all species I guess. It's generally one of the most tender pieces of flesh on the fish since it's not used as rigorously as the other muscles. I usually only eat the cheek if the fish is steamed whole asian style. Another tender part is the top of the head.
