Yep, You should see the way I cook for myself. If I have a great cut of beef I just chill it until firm then slice very thin and dip it in horseradish sauce.
Several names depending on where you are, it is usually called carpaccio, sometimes sliced beef tartare, you can use several dips such as oil and peppered vinegar. The larger pic is from a resteraunt called Tango'sDo they have a name for this beef sashimi? lol
Sounds interesting, might try it myself.
