well the easiest way to tell a convicts sex is to look and see if they have orange on their belly wich would indicate a female, and also males will usually have longer fins than the females

Until you get wigglers or can properly vent or otherwise sex your fish, you can't be 100% certain that your fish are male/female from 'pair behavior'.

one is a male cause has no orange and has lnger tailfins and the other is female caue she has alota orange

how possible is it for convicts to change sex in a sole sex environment. i personally have obseved this in guppies early in my feeder rearing days. i'm pretty sure other fish do it too.
