Purée a pound of catfish fillet(snakeheads are better but harder to come by), add white powdered pepper, three egg whites purée ginger, salt, starch(or baking soda if you want a puffier fish ball...

Make fish balls with two spoons and deep fry until light golden brown; peel and sauté sigua and tomatoes, add the fish balls, and season with salt pepper to taste.
