Here you can see the overflow boxes..one on each side, one onleft is covered up by my rebel flag in the window (reflection) you cansee the jets 1 beside each overflow box...

He might be hiding because the lights and sand might be too bright for him. Just a thought.
For the eating, use sinking pellets and algae wafers. Mine is a slow eater, too, and I have to drop food so the current carries it away from the return.
solo makes sense for the slow eating. My Oscar used to eat very quickly when his mate was still alive as they would compete for it and try to move each other out of the way to get the next piece of food. Now that she's gone he eats more slowly as he knows the 2 JD's are no match and really theres nothing in the tank to stop him from getting as much as he wants.
you could try getting a floating ring and toss the pellets in the middle of that to prevent them from getting to the returns before he can eat them. The only other recomendation is be patient and feed at his pace. Ie drop only enough for a mouthful in at a time and then wait for him to finish it before dropping another.
