A good temp would be 75 ish.
They are very tolerant of water chemistry I would not worry too much.
Despite being south American, they are not soft water loving fish like a lot of amazonian species.
Coming from Ecuador they can be found in very hard water.
Just introduce how you normally would they are hard as nails.
Once they pair and start spawning if I don't want to raise fry is it best just to suck out the eggs? Will it have a negative impact on their mental state? Might sound like a silly question but I don't have the means nor the want to raise fry fry.
They'll eat the fry if you leave em in the tank long enough. So, if you wanna raise the fry, take em out with a net. If you don't want to raise the fry, just leave em in the tank and let nature take its course.
The male and female could fight with or without fry in the tank. They're cichlids. Sometimes the male wants the female to lay eggs, he gets full of hormones and bio-chemicals, starts getting aggressive.
They won't just totally for sure eat the fry, but most of the time they do. I think they do it to clear the way for the next batch of fry.
