a sump is really all thats nessicary infact youd still be over filtering with just a sump on a 75 gallon tank (depending on how much bio media/turnover rate of course)

as for food, I start baby reds with flake food, then step them up to Hikari Cichlid Gold, the one in the red package.
Feeder goldfish are a temptation, but come at a cost. they raise aggression in the tank, carry disease and add tremendous bio load.
