Sorry, no, that's not what I should have said - I will never go bare as in just glass. Bare for me, which means just not with a ton of rooted plants in the substrate.Yeah i think the larger tank would definitely be just driftwood and rocks. bare bottom as in just glass?
I have my spraybar pointed at the wall - this helps keep the water lettuce from blowing everywhere, but also keeps the current down because the polys don't like a lot of current. Even if you have a lot of surface agitation, the water lettuce will then just clump together which isn't the worst thing. It'd be like close to shore vs deeper in a water body. Plants aren't always perfectly dispersed.

People say that if you let them get to the surface they always will (some like them bushy and short) but I'd want them to grow tall for this purpose.

Well a really long time, however each week at WC time I compost a bunch of plants (have to have some open water at the surface) so I always just keep the best looking ones. So they are constantly reproducing vs. getting old I think....
How long have you had your WL growing ? Read that they eventually die off when kept in doors any truth to that
