That would be a great setup for a nice solo Oscar or a Midas or a jaguar. I am currently doing solo setup for each of those 3 in my 125s. Though I do have a pleco in with the Midas i guess, but they don’t even notice each other.
Oscar and Midas are the most “owner interactive” solo fish imo.

Are you looking for a single wet pet type fish? Puffers make cool wet pets. You could also get a glass banger cichlid. You could do very cool oddball aquarium in a 125. Maybe some smaller bichirs, rope fish, an African leaf fish, and/or brown knife a smaller type of shovelnose like elongatus
OMG Wet Pet. YES, that's amazing and a great way to describe it! I don't know who came up with that but it's brilliant! I saw the reply for this come through last night on mobile and I searched for African Leaf Fish and the few videos on YT that I saw are pretty neat!
You could do a community. I love watching my 135 community tank. The main fish are 3 ctenopoma (African leaf fish), an ebjd and1 Rotkeil severum. Then I've got a school of dennison barbs, various cories, couple raphael cats, couple bumblebee cats and bn plecos. It's a pretty harmonious tank with lots of interest and activity. My leaf fish are pretty outgoing and they've got these big puppy dog eyes when they beg for food lol.

Vieja are cool, I've seen them on Joey's YT videos. I used to comment all the time when he called then VEE-JAH. Bro, it's Vee-EE-ha! LOL
I’m into the severum or Geophagus right now.
Mix in some electric blue Acara for a splash of color and that green phantom you mentioned.
With some nice driftwood roots and soft lighting makes a beautiful South American display.
I always stop and admire the Electric Blues at my "local" (it's about 45 min drive away from me) larger aquarium store. Beautiful fish and love the color!
My parents are from South America (Colombia specifically) and I have had Colombian tetras before. I wouldn't mind a "Colombian" themed tank, but there are so many good suggestions here that I feel like a kid in a candy store with $100 bill in my pocket! too many to choose from!
ctenopoma are very underrated fish, I’ve had one for about 2.5 years now. They check all the boxes IMO

I have a flowerhorn, those make good wet pet and are fancy looking. Oscars, midas, red devil, trimac, jaguar, vieja, sevrum are good options too, I am not familiar with many other.

That's an awesome looking Flowerhorn. I was first introduced to them, again, by Joey on YT. FRANK was an awesome fish!
If you want a highly interactive "glass banger" I suggest a male Amphilophus, either a Citrinellum, Labiatus, or Saggitae.
I love my male Saggitae, even tho he would rather rip me to shreds.

Personally I would recommend any of the following. Flowerhorn, Oscars, Jaguar cichlids, red tiger motaguensis, King Kong parrots, bichirs, Cuban cichlids, red devil's, Midas, trimacs, vieja, green sunfish, warmouth, rock bass, bluegill, yellow perch, European redfin perch, fresh water eels, crappie, mbu pufferfish, and many other fish I just can't remember atm.
Btw I understand the whole fisherman family life style. It won't stop at game fish. Lol can't remember how many times someone has told me "o that fish looks pretty, it's pan sized too, when are we eating him?".

The mbu would be a way to not have to here “ let’s eat him”
I think a MBU would outgrow my 125G. Would love to have one, but I don't think it's the right fish for me, but they are cool fish!
I had a large Fahaka for a while, he was an awesome wet pet, but demolish any tank mate. I tried a couple different fish and he little ripped them to pieces. They looked like they swallowed a grenade
Yeah, Joey's got a Fahaka right now, I just don't want to have to go out and buy shell fish for one to eat and keep those front teeth under control! I know my limits and I need to stick to pellets (for now) in a monster fish as the primary food source.
