They're fresh from the market but I throw 'em in the freezer. And as far back as I can remember he's had them. I'll check his older photos later
 
Are the shrimp shell-on or off? Shrimp shells have high levels of carotenoids which promote warmer colouration i.e yellow, orange, red ect.. Shrimp flesh also contains carotene, but in lower doses which could also be a contributor.

Feeding shrimp does not have that great of an effect on a fish's coloration. In my experience, they brighten yellow-red coloration, they don't create or spread it. I think coloration has more to do with genetics than feeding.

You are partly right, the colour will spread to where it is supposed to be on the body, but it cannot be created. It is scientifically proven that carotene will improve any warm colour in fish if it is naturally present in their genetics. So to put it bluntly, feeding fish shrimp will not create colour that doesn't already exist in some form, but the long term effect is it will improve it.
