Weirdest fishy thing possible for a 55 gallon.

If you keep poplypterus in oxygen depleted water, they will grow those gill things the axolotl or whatever that thing is has. I wouldn't recommend this, but it is natural for them to do this and they can also breath air directly.
 
A tank of leaf fish make a great oddball tank. When they eat, their mouths shoot out like a telescope, really fun to watch.
 
I think a polypterus senegalus would be fine for life in the 55, get a pair of them. You could then add an african brown knife and/or a leopard ctenopoma.

I think for a dojo a pair of sen's & a leopard ctenopoma would be a pretty sweet setup for a 55 if you're looking for the 'wtf is that?' factor.

Actually I always heard that the only way to get them to retain their external gills is to keep them in a tank that has an extremely high amount of oxygen (since they are useless otherwise).

If he's willing to spend some money, a pelican knifefish would be perfect, but you'll have to keep the lights dim in order to see it. A golden amazon puffer could work too, but by itself. A redfin wolf fish would get some attention as well, plus they're highly predatory. Fancy plecos would get some looks too, especially a medusa head.

Or for ultimate WTF, anableps. Or get one of those vampire shrimp.
