Have your water conditions changed? Hardness / pH ? that might explain why he is leaving the plants alone now.

nope, everything is the same as far as ph and hardness. the only thing i could think is that we did move in early february and it ended up being a lot more stressful on the oscar then i had anticipated. he was not in great shape when we got to the new house (3hr drive), so i don't know if the whole move had anything to do with it, i don't see why it would, but i added the plants like 2 weeks later and he never touched them.

the only other thing i can think is that he's been fed NLS pellets exclusively for about 18 months now. maybe oscars rip up plants and eat everything else in their tank because they are lacking in nutrition that other staple foods are lacking? i have noticed he is far less agressive and more calm since being on NLS, but he's also gotten older and bigger in that time as well so who knows...
 
I think feeding the pellets is helping though. First off, a fish not fed live foods IMO becomes less aggressive. Also some fish just get too used to a kind of food they prefer it over another, even to a point where they only wanna eat that particular food. But I do think that if you are not careful the Oscar could go for some fish.

i won't be surprised if they start disappearing in ones and twos eventually. but every morning i count them and i'm always surprised they all made it through the night.
 
It doesn't always work that way as you describe picking them off one or two at a time. You will wake up one morning and they will all be gone. I've seen it happen many times.

How do you train an oscar not to attack plants exactly?

How do you train oscars not to eat tetras? mine would eat them all in one night.
