A personable cichlid for my 75 gallon tank.

Hmm, none of those particularly peak my interest, anything else? If not I'll go with a sev + one or two other small ones plus the danios and cats.
 
Just do a Firemouth, acara, or convict and only 1

either a con or firemouth then, such a hard choice for me. Which in your opinion is more personable, outgoing, easier to handfeed, and harder to scare?

Well I talked to a guy at my LFC yesterday and he said he has been looking for some giant danios for his 125 planted tank (not sure how an LFS doesn't even have danios?) and I may give or sell them to him. So that opens up options for more boisterous cichlids again. I'd love an amph but not risking that with my catfish. Maybe a texas cichlid, vieja, festae, or possibly a jaguar as a growout.

Festae and Jags can be as bad or worse than amphs. So no go on them. A Texas or vieja might work

a Cuban would fit lifetime in a 75 and would eventually let you touch him. But he would be a one fish only in that tank. They are sort of like puppies when they get older and recognize its owner.
