A personable cichlid for my 75 gallon tank.

Festae and Jags can be as bad or worse than amphs. So no go on them. A Texas or vieja might work

Would a tex and con be pushing it? Thinking I may do a Central American tank instead of South American. Or maybe something like a Nicaragua, con, fm? Just fell in love with CAs last night at my LFC presentation :)

How about this:

1 Convict Cichlid
1 Firemouth
1 Nicaragua Cichlid
6 Giant Danios
1 Striped Raph
1 Sailfin Pleco (growout)

Notice I dropped getting any more cats, I thought it may give me some more room for cichlids.

That could work just watch for aggression

Awesome, who would you suspect to be the "rogue"? The con I assume right? I am also planning on all the coulda being males to prevent hybridization.

Have you ever had nicaraguas? Are they very personable? And I don't mean glass angers I mean come up to the glass when they see you, recognize owner from others and possibly handfeed.

I have. No, they aren't what I would call personable. Along the same lines as convicts. They never seem to have that sense of recognition like sevs, amphs, terrors, etc. Nothing in your latest stock adjustment would be what I would consider personable.

The Nic is likely to be your "rogue". They they can be quite nasty when larger, especially if you end up with a 10" male. But then the firemouth and con could end up being nasty as well. All three are cichlids that tend to be fine with tankmates without a mate present, but they are still cichlids and individual personality will play a part.

Personally, I would shoot for an all female tank. Female cons have red bellies as opposed to just a plain black and white male, and they hit about 4-5". A female Nic will be more colorful than a male and grow smaller as well (about 6"), which will help reduce the possibility of potential arguments. A female firemouth would be the only place you would lose a bit of color, but even then, it wouldn't be much. Female firemouths are only a little duller than males and grow to 5-6".

well do they even come up to the glass for you like angels do? I do love female convicts but not so much fms. If nics don't even come up to the glass what is another CA cichlid of similar aggression and size that does?

You aren't really going to find anything that will live peacefully with a con and a firemouth that is personable as well. Some Nics will come near during feeding time, but most won't. Same for cons. Firemouths usually do, but not all of them will. If you want personable, go with a single large CA cichlid or as you mentioned, a group of angels.

The issue you're having with your build is that you want several fish, all/most with personability, that won't kill each other, and won't kill your dithers or catfish. All these requirement make a satisfactory build incredibly difficult. You are going to have to give on something.

How about for cichlids: green texas, convict

and how about to narrow it down even more I just don't want them to run from me when I get close, if they just idle that's fine I just don't want fish that fear the sight of me other than when I feed them.
