A personable cichlid for my 75 gallon tank.

I have a pair of nics and a male con and they all come to the glass and beg for food, in a 75

I guess it just depends on the individual fish then. Are the nics a breeding pair? I'd love to breed but would be worried my cats would eat the eggs or fry.

It does depend on the individual. A breeding pair would also be more defensive of their fry and therefore wouldn't run at the first sign of danger. They wouldn't come to greet you if they had fry to look after, but wouldn't likely run away either.

A Texas would very likely be personable (in the thought that it would come to the glass looking for food) and would work out with a con. Make sure they are same gender as they will hybridize if not (I have seen viable fry in my LFSs, but were thankfully labeled as such).

so these are my options: can all of these work?

1 green texas
1 convict
6 giant danios
1 striped raph
1 sailfin pleco

or

1 nicaragua
1 convict
1 firemouth
6 giant danios
1 striped raph
1 sailfin pleco

or

2 nicaragua (pair)
1 either con or fm
6 giant danios
1 striped raph
1 sailfin pleco
 
Is there any way to tell H. carpintis from H. Cyanoguttatus at about 2.5 or 3" (the size I would get one at)?
 
A tex will eventually eat your danios and possibly kill your Raphael, yes they have spawned in my tank. When spawning the female wont leave the nest and the male chases off the con and rushes the glass
