Fire eel is completely white

Eating is a good sign.

Good readings, except the nitrates. Is there a reason your water is 30 ppm nitrates? Is it that out of the tap? Otherwise, if it were me, I'd do a water change and get it down a lot lower.

It might sound low, but I like fire eels and I'd like it to be a lot lower.

Yeah it's from my well and how low
 
You cant get it lower if your well water is just as high. You would either a nitrate resin or carefully mix distilled water into your tank over time to get nitrates below 20ppm.

So I'll try my best to get it below 20 the tank has the temp increased to 84 to help get rid of ich as it still has it

If your fire eel can handle it, I would get the temp to 87F so that the ich stops reproducing and you can remove some of it through siphoning the substrate.
