I think that, even though you refuse to believe it, your lighting is the problem. If you only turn it on when you feed them, and you only feed them sparingly by your own admission, you are giving them no "cycle". They have no idea when this bright light is going to turn on again. Also, they are ambush predators, and catfish. They hide, thats what they do.
