How do I kill fish in a Humane way?

I had to kill a tiretrack eel once, I used a hammer. It was only about 10" long but had got it's face messed up in the filter impeller.
 
supposedly freezing, but how'd you like to be frozen? i'd rather be gased, carbon monoxide! but for a fish...maybe there isn't one, since we don't know how much they suffer :)

This method is fast and painless . If you have the guts, then do this.
Clove oil mentioned by peanut power is effective too.
I dont know about freezing. Ive heard people tell me that they can hear the fish
fight in the freezer for a few minutes before going silent. Not a good way to go.

Not to mention possibly contaminating the body of water and infecting all the local fish.

if they are still in the tank w/ water then get a bag of ice cover all sides of tank to minimize stress and insert ice into tank just use enough ice :(

chlorine is quick on fish
 
I have used the freezer method as well. I put the bag by the air inlet or as low in the bottom of the freezer as possible so it cools faster.
