ID this Cool looking oscar?

I wouldn't try any pellet larger than 2mm Omega One Small sinking. Oscar mouths are bigger than their throats. So no shrimp pellets or medium Hikari.
Alrighty, I’ll just stick with those. Although I’ve tried all of those and even so if they’d be bit big for them knowing how Oscar’s are , they’d at least try to go for it. As I said Vulcan will go for anything, Zues is my 4th oscar I’ve owned. My first one died of old age, my 2nd I traded in. Then Vulcan, my 3rd and Zeus my 4th. And all different personalities but no matter what they tried to eat anything lol!
 
I agree. Try the bloodworm and if that isn't taken then I'd personally say something is up and you need to do a bit more investigation but bloodworm should do the trick. You can also try worms (nightcrawlers) mine go wild for those jumping out of the water to grab them. They have brown crickets once a week and again they go wild for them so you have a few options you can try. Let us know how you get on.

I used to feed my very first Oscar night crawlers, I used to be timid to feed it to him because he would jump and soak me wet! I miss him. :(

So, has he started to eat anything? Did you try the bloodworm?
I tried the blood worms and he ate a few when they broke off like SUPER tiny singular worms and that was it. So basically, no, not really :( and he’s always Chilling in the back corner alone or glass surfing, but he kinda of back offs when I get close

Also, I do a water test again when I get home from work which will be in about 9 hours, to see if if I’m missing anything, although I’d doubt because my other Oscar is just thriving and I also I have a albino Senegal bichir that I’m temporary growing out but seems to be just fine

Id try some live food, crickets or worms etc if the same thing happens then it must be an underlying issue. You are approaching 2 weeks now aren't you without him eating? That is a little too long for my liking. He could be finding it really hard to adjust and settle in, they are very individual. What was he fed on before you got him?

He just ignores the pellets I try feeding, and I believe my LFS feeds their fish pellets . He looked and looks healthy when I got him so I didn’t think of him being sick at the time
 
Try putting in some floating plants. Sometimes albino /leucistic morphs are more sensitive to light and don't like coming up for food. Also, watch for hidden aggression or bullying when they aren't looking. Put small piles of stones and bunched plants in. What makes one oscar comfortable may not be working for the other.
