Ok, everyone seems to have missed the species.
As far as Lepomis go, I really like all of them. They all taste similar, so it's hard to pick one over the other.
IMO, and keep in mind it probably has somewhat to do with region and individual waterways:
I like pumpkinseed (L. gibbosus) the best, and longear (L. megalotis) comes in second. Neither seem to be effected that negatively by water quality, and they test good pretty much anywhere I catch them.
Warmouth and Bluegill (L. gulosus, L. macrochirus) taste about the same to me and I'd put them middle of the road taste wise. I think these guys vary a lot more in tast depending on where you catch them, maybe because they grow bigger and eat a lot more? I dunno, but I've had some fairly mediocre ones in some places and some absolutely wonderful ones in very clean water. The really huge ones are more likely to taste worse.
Green sunfish (L. cyanellus) I'd rate above them, and in some cases taste just as good as pumpkinseed or longear.
Redears (L. microlophus), similar to bluegill, IMO, but I haven't caught enough of these to form a good opinion on them.
Redbreast(L auritis) I'd rate with green sunfish, but like the redears I haven't caught enough to form a good opinion.
Any others I haven't caught or are too small to eat.
Like I said though, there's not a huge difference in taste. If I went fishing and caught several of these species I wouldn't hesitate to eat any of them, but I'd lean towards the pumpkinseed give the choice. The big problem with pumpkinseed is they don't tend to be too big so you have to catch a lot of them. Longear are better in that respect since I tend to catch them bigger so they're easier to filet.
Sunfish are by far one of my favorite fish to eat, only surpassed by northern pike, ringed perch (yellow perch to most of you) and walleye.
