Looking For a "Conversation Starter" Type Fish for My 125 Gallon - Suggestions?

Black Ghost Knifefish is your winner, people who aren't familiar with the hobby and are used to goldfish tend to be awed when they first see a BGK, even more so when it grows out :D

+1 I saw one of them at my dads friends house when i was little. That exact fish got me into the hobby. But they grow soooo S.L.O.W. Mine is 5 years old and has only grown 4". Very slow growing but long lived. However they tend to be shy at first and a fish that people can not see will not start conversations.

+1 on The Trigger (either Clown, Picasso, Undulated or Niger). A 125 would be a good setup for a Trigger....my brother in law has 1 (Picasso) and they are a very interactive fish, much like the puffers. Converting to a saltwater system was something I am now finally doing after years of keeping just freshwater tanks. It has been really easier than expected converting one of my 150's from freshwater to salt. Plus the incredible colors of saltwater fish always seem to grab peoples attention. Good luck to whatever route you choose!
 
+1 on the gulper, wanted one for ages but some of my fish will always be at risk... a lone buttikoferii is a cheap awesome wet pet too...

That's insane. I wasn't expecting that at all! Gulpers look a lot like the common bullhead, though. The tilapia looks pretty cool too.

I've been leaning towards the giant puffer but they seem like a lot of work so I think I'm going to pass on that.

I have a black knife ghost in the 75 with a crap more of other fish, see him all the time, very interesting fish, they are electric and never knows if he is coming or going. they get up to 12" , bilger cool to, again a tank that big can make all kinds of interesting combo's of fish.
