Planting my tank

2 foot tall tank for good photosynthesis near the bottom of the tank.
*18” TALL and 24” WIDE. My mistake.
Cryptocoryne wendtii "Green" is probably going to be your best bet, although they might not exactly be small. Staurogyne repens is another nice small foreground plant, but I'm not entirely too certain whether they'll do too well in a low-light low-tech sandy tank.
I guess I’ll see where it takes me. My best bet is to go to aquarium fish depot and just listen to the guy there and do some research.

Great looking plants for any set up, low tech or otherwise. They grow nicely and cover a decent amount of the bottom. My polys love laying around the edges of them
 
You may want to try pothos. It's hardy, eats lots of nitrogenous waste, and will grow long roots that fish may like to swim through.

I know almost nothing about pothos. My science teacher, who is also a fish lover, grows pothos in little jars in the classroom.

One issue might be my lid. The lid is polycarbonate, and therefore would kill the pothos if I just slid them under. In the past, the palmas has jumped out of the fish tank. Thankfully, it was 1am, so I was there to put him back in. How would I properly put them in the fish tank without killing them? If I have them a 5” gap in the back, what’s the likelihood a poly would find the gap and jump out before the pothos grow to cover it?
 
I'm afraid I can't help you with that. I don't keep my pothos with jumping fish so I don't know how to put it in a narrow or tight gap.

Like I said, I know next to nothing, and have only seen them once or twice. My light is an LED strip…I will end up getting a LED light to hang from the ceiling, is that enough? I would plan to have pathos in the back of the tank, but I also want jungle Val there too, so could these plants coexist together, even though the pathos are taking all the light?

*my autocorrect changes pothos to pathos because I’ve taken a class about tv commercials and persuasion, so ethos pathos and logo*
 
I don't think you'd have a problem with that. Pothos is a low light plant.

Can't say for sure, you may have luck experimenting with the right place to put the pothos relative to the Val.
