She is old enough to spawn now, but whether or not the male you pick, will be acceptable to her, may be another story.
Just because there is a male and female, doesn't mean they will spawn, even if you get a pair that has spawned in someone else tank, doesn't mean once moved, they will still spawn in another tank.
All cichlids have complex rituals they follow before accepting a mate.
I do think she has good color.
If it were me though, I'd get 2 or 3 more females, and one male, and expect the male to kill at least one, maybe 2 of the females before a pair is formed.
Usually I get 5-8 juvies, and let them grow up together, naturally selecting their own mates.
Just an aside, to me, a JD/salvini hybrid would be worthless.

Could I get more males than females

Agree with Reiner, the males in a majority of cases will kill any nonrceptive females. I've always found it best to have multiple females to 1 male.
In all of about 50 or more cichlids that spawned in my tanks, I've only had 2 where females have killed males, Tomocichla tuba, and Vieja zonata, in all others, the females usually end up losers, before, during and after spawns, especially if the males are larger, which is usually the case.
