A ghost knife will get way too big for a 55 IMO.

It won't get THAT big in 2 years. So if your teacher is gonna keep this tank for ever than yes maybe not the best option, if he will upgrade, i see no problem with a ghost knife.

I guess you buy your fish big, but i buy mine all young...and it won't grow that big that quick.
