Which Parachromis pair is best suited for a 140g?

Does this apply to all Parachromis species or only certain types? Would for example a pair of Freddies have a bigger chance of not killing eachother off than a pair of Jags, or is this random and individual in each fish?

I would recommend RTM's, Friedrichsthalii, or Jags. I have all three, in different tanks of course, and they're all great as choices. I think any of the ones I've mentioned would be fine in your 140.

X2!

IMO, true Parachromis would do better in a larger tank.
I wouldn't do grammodes unless you just want a male or so. I say this because they are one of the silent killers in comunity tank's and without the proper set up it might fail even with just a female. they are just plain nut's, people overlook loiselli and is actually a way prettier fish IMO then Jags and Freddies:D

From what i've read C.Grammodes isn't a pair bonding cichlid, and in a 140g tank with no other fish the male will probably get pretty hard on the female i guess.

Jags for sure. I own 1 of all the Parachromis sp. and have kept Jags for over 15 yrs. Jags all the way. The seem to have a strong bond when they pair up. But at the moment I am in awe of my Red Tiger.
