I would say stay away from the T.blondi and P.metallica unless you know what you are doing! Well, T. blondi isn't so bad (you did list birdeaters and baboons) but anything in the poecilotheria family carry a nasty venom and a bad attitude despite their beauty.
On your list, I agree with the chaco gold for a good sized and tempered spider. I've have had a pink zebra beauty for 12 or so years and I hear the chaco gold is quite similar in nature. She is so easy going she almost bores me.
I also have a soft spot for the brazilian black and greenbottle blues, I just love em. So striking but still pretty docile. Greenbottle blues are beautiful at any age but can be jumpy, IMO. For color and temper (though small size and much $$ last I checked) avicularia metallica (antilles pinktoe) is one of my faves without being terribly rare/hard to get and they are tempered like any other pinktoe.
Another favorite of mine, though have not owned, hopefully I can get one next year, is the brazilian salmon pink birdeater (Lasiodora parahybana), HUGE, fast growing, tends to stay in sight, good temper compared to others of such size but a definite hair-flicker, good color IMO, that's what I'd pick!
