They often are in smaller tanks with big fish like oscars. I have some right now and they are not jumpy at all.
What size tank are yours in?

At the moment a 60 gallon grow out for in a few konths im setting up a 125 im getting rid of one oscar so it would be 7 silver dollars and an oscar and a fire eel until he grows out of the tank but i might get rid of everything and get back into peacock cichlids

So the fish are all juveniles at the moment.
If this is the case it's a little premature to give advice on your situation.
A lot can change when fish reach adult sizes.

How would something like an Eastern Rainbowfish or Bosemans Rainbowfish be with an Oscar?

No the silver dollars are like 3-4inches i just didnt finish my basement the oscars are juveniles though theyre 4-5inches

For me a school of 5, and the tank in the living room, they would bolt whenever someone walked in front of the tank, causing the other fish to bolt.
Wow, that is unfortunate for you. I never had that problem, as a matter of fact I always use Silver Dollars or Tinfoil Barbs to get my cichlids out of their caves.

The smaller the shoal and the smaller the tank, the more jumpy they become.
I have 19 in a 7x2x2 hardly jumpy at all.
Put them in a 100 gallon with a large Oscar and in small numbers, I recon they will be skittish.
Yeah I agree the more in a group the more confident they are.
