Depending on how high you cut it off, it can push new growth through the old stalk, or (rarely) start lots of new ones.

Oh no,as I said it is quite tall and there are few good places inside my house for it to overwinter so a year or so ago my wife came up with the idea of putting it in an empty room that had plenty of sunny windows where she works.Well,either the room must not have been warm enough or the plant did not get enough light but by the time I came to get it in the Spring it was just about dead...It really pissed me off as it had taken me years to grow it to that height.Krich - your mention of the ponytail "dying down" - it isn't outside year round is it ?
