Well, if you don't understand, I'll take another crack at it.
First of all, you say, "you are undoubtedly getting a better fish"... and I'd say, "bunk" to that. I've seen a LOT of poorly bred (and fed) fish come directly from the breeders. ...and "why would a breeder expect anything less". Well, the ones who do it for the money, ummm... do it for the money. A healthy interest in fish only goes as far as their wallet.
Over the years, I've bred 20 or 30 different species of cichlids, and I've GIVEN most of them away. The ones that I have sold, I've sold at no more than what the LFS would give me for them. Say... maybe a third of LFS price.
I bred the fish because I enjoyed the process, and I certainly didn't expect to make a profit... and I don't need to sell my fish for long dollar, in order to feel better about myself. Greed is greed... and to my way of looking at it, greed is bad. I'd rather find someone who'd enjoy them, and feel good about making their day. When I charge market rate, their money takes away my good feeling.
Hey... but I don't expect everyone to agree with this, but then again... This way of looking at the hobby is the way I find out who i want to do business with.
