Yeah, sounds like you have the same tank I have. I was running mine for a few weeks on canister filters and the water level filled about 2" less than the overflow was at. Worked great and allowed me to live plumb and setup my sump with livestock and water in the aquarium.
 
I was planning to do that permanently but figured a few bucks at the hardware store and I could plumb it up easily.

Now I want to turn one of the overflows into a fluidized bed filter. I want to Use both drilled holes in that overflow as an outflow and put Purigen in there. If I valve the outflow I can get the flow just right and and have a 28" fluidized filter. The other overflow will be the return and skimmer. Should only cost a few bucks in fitting to make it work.
 
I'm a little bit unclear on your plan. Are you going to end up using a sump and just want to use the area in the overflows temporarily while you build the sump or are you planning on keeping the FX6 and making the overflows into a permanent bio filter setup?
 
I have a 75 gal that I was planning to turn into a sump. However the canister works so well I think I will just keep it and try the fluidized filter in one of the overflow towers. I may plumb another fx5 in with the current one.
 
In my opinion, since you already have the toughest part of installing a sump completed (being that the tank is drilled for the plumbing already), it would be a massive waste to continue with canisters over installing a sump. JMO though. I am a fan of the sump route.

Sumps are definitely cool. I'm looking forward to building mine. Some day when I have a much larger tank I'm going to make one out of my 75 gallon and run a reeflo gold hammerhead pump. I've been compiling a list of goodies for the project. Shouldn't be more than a grand or so in equipment.
 
I really think that the 210 would benefit a lot by having a sump under it. I am in the process (the very slow process) of setting up my 220 and using a 55 gal sump for it. I will be using baffles and making a refugium within it that I can use as a grow out area or a spot to put any injured fish. Right now one of my biggest hold ups is getting the holes drilled in the tank for the overflows because I have to find the time to have three other people come to help me move it out into my driveway so I can run the water over the hole saw while I drill. This thing weighs every bit of 450-500lbs of awkwardness.

Anyway, I just thought I would share my opinion but it's certainly not the only right way to go about filtering the aquarium.
 
I'm sure that would be quite a project. What are you looking to get for flow rate? when I do my sump I going to be aiming for 5000gph. That's going to be on a 2000 gallon tank though haha
 
Wow, that will be a huge tank!

I am aiming to get about 1,500gph for a turnover of about 6x the system gallons. I will be using two Rio 20HF pumps that are capable of pumping about 800-900gph each at the head height I will be at. I will be installing valves so I can regulate the flow if it turns out to be too high.
